Anne Owen’s Apple Cake

Ingredients:

225g / 8oz self-raising wholemeal flour
1 teaspoon mixed spice
125g / 4oz butter
125g / 4oz brown sugar
350g / 12oz apples, peeled, cored and thinly sliced
125g / 4oz currants
1 egg
2 tablespoons milk, or more

Method:

Preheat the oven to 150 C / 300 F / Gas Mark 2.

Grease and line a 23cm (9 inch) cake tin.

Put the flour and mixed spice into a bowl, add the butter and rub in with your fingertips until the mixture resembles breadcrumbs.

Add the sugar, apple, currants, egg and milk and mix to combine well. The mixture needs to be quite soft, so that it drops easily from the end of the spoon, so add a little more milk if needed.

Put the mixture into the tin, level the surface and bake for 1 hour, or until it is firm and a skewer comes out clean. Cool on a wire rack and cut into 9 – 12 pieces.
