One of the ‘benefits’ of life as a Trading Hut Secretary is that I get inundated with seed/bulb catalogues. Whilst leafing through the latest offering from Dobie’s I found the following recipe. I haven’t tried it myself, as I don’t have any green tomatoes, but I thought you might enjoy it as an alternative to green tomato chutney.
Ingredients:
450g green tomatoes, sliced
1 free range egg, beaten
100g polenta, spread on plate
8 rashers streaky bacon
I tbsp. vegetable oil
25g butter
Seasoning
Parsley, finely chopped
Method:
1. Season the tomato slices then coat in the egg followed by the polenta.
2. Fry the bacon in the oil until crisp and dry. Remove from the pan and crumble the bacon.
3. Add the butter to the bacon fat remaining in the pan and fry the tomatoes on both sides until golden.
4. Place the tomatoes on a dish and sprinkle the crumbled bacon over them followed by the parsley as a garnish.
5. Serve

In passing I’m glad you recognise the existence of green toms – though I fear you mean unripe ones: yesterday’s judges seemed unaware of my great “Green Zebra” variety.
